Blossom's Recipes

Food is not a number of vitamins, minerals, protein, carbohydrates, sugar, and so on. The smell, taste, color, temperature, and the beauty of freshly cooked meal creates memories and feelings in the human being soul. The memories of childhood have a special place with mealtime, and Blossom value the lunch time as an essential part of the curriculum. I grew up in a family where food was a center of family life; the kitchen was the center of the house. In my "family nest" was the place that I learned to cook, and it is the place where the Blossom’s menu came. The recipes are written below as my mother writes her recipes.


Beans – Feijão





Instant Pot, or regular pot


3 cups of beans

2 tsp. of chopped garlic

2 bay leaves

Smoke paprika

Parley and cilantro

Hot water * ( two finger of water on topo of the beans)


Let beans soak overnight. After that, wash very well because beans will still have some dirt. In an Instant pot or pan, heat olive oil, garlic, and sauté until the garlic becomes “golden”, add beans, bay leaf water *, paprika, parsley, cilantro, and salt. Close the Instant pot following the bean's instructions ( 30 minutes, high pressure) or close the pan and leave to cook around 1 hour. Some beans need more time to become soft. In this case, you can turn on the heat and bring beans back to a boil for a few more minutes without pressure.


Meat Option - bacon or / and smoke sausage

If you want to add flavor or protein, bacon can be sautéed and rendered before you add the garlic. Follow all steps on the top. The addition of bacon adds a lot of flavors.


Vegies Option

You may also use the vegetarian option and add use Kampuchea squash, potatos, tomato. To increase the flavor, you can reserve part of parsley and cilantro to add when the beans will be served.



Kale – Couve . Knowing by Blossom's children as Fairy Hair

1 Bunch of kale

2 tsp. of chopped garlic

2 tsp. of olive oil

1 tsp. of chopped bacon (you can take off if you are vegetarian)



Cut kale like picture. Render the fat from the bacon. After that, add garlic. Sautee it until becomes “golden”, and add julienned kale. Stir a little bit, during 1 minute or less on the heat. Remove the pan from heat. Do not cook kale too long as you want to keep the bright green color and all the nutrients from this healthful leafy green. It is just one-minute sault and done.




Tomato Sauce – Molho de Tomate

The Waldorf School, my children, attended in Brazil, Freedom School Manacá, has a beautiful kitchen with amazing cooks. Manacá provides lunch and snacks that children love. On Fridays, it is a special day for children. Nobody wants to miss school because it will be Pasta Day. Why is pasta so special? All parents have the same questions, so every parent would like to know how to cook Manacá’s pasta. During the Christmas Festival, we won a book with all the unique Manacá’s recipes. It was amazing. We won the pasta recipes, also! Today, the Manacá tomato sauce is part of Blossom’s menu and like my children. Friday is the Pasta day in Blossom that children know by heart.


One jar of tomato sauce

1 big carrot or two small carrots

3 tsp. chopped Presley

3 tsp. of Basil chopped.

2 tsp. of garlic

Olive oil


Put in the blender the tomato and carrot. Blend very well until the mixture is a liquid.

Sautee garlic with olive oil. Add tomato with carrot, and basil. Add 1 half to 1 cup of water. Let cook for 10 minutes or more. Add parsley and salt after you remove the pan from heat. The carrots take off all the acid of the tomato, and it is great for kids. If you use canned tomato sauce, maybe you will need a ¼ tsp. of sugar.




Traditional Winter Portuguese Soup ( vegetarian version) – Caldo Verde



1/2 cup of olive oil

1 big onion chopped

2 tsp. of garlic

5 big potatoes without peel and chopped

5 cups vegetable broth

Salt

Black pepper

1 bunch kale


Sautee garlic and onion with olive oil. Add potatoes, mix 5 minutes and add water. When it starts to boil, lower the heat. Let it cook until potatoes are soft. When they are soft, blend it. You can use a blender or mixer. It is good to get some little pieces of potatoes. Add salt, black pepper. If the soup is too thick, you can add water or chicken broth. Now, you cut the kale like the picture. Put kale in the soup, mix for a few minutes without the kale green color. Serve immediately.


Meat Option Smoke Sauge, you can fry smoke sausage, after that add garlic and follow the recipe if you want with sausage that it is the original version.




Chicken Soup – Canja de Galinha




The soup is very common in Brazil. The mothers and grandmothers have cooked chicken soup when the children are sick.


Parts of chicken - you can use raw or roast chicken

2 grated carrots

1/2 cup of celery

2 tsp. chopped pepper

2 tsp. of onion

2 tsp. of garlic

¼ tsp. of turmeric

3 tsp. of parsley

2 tsp. of green onion

1 cup of uncooked rice

4 cups chicken broth or wate



First sauté the onion, garlic. After a few minutes, add celery, carrot, pepper, turmeric, chicken, and rice. Let it cook for a few additional minutes. Add chicken broth or water, and salt. When the rice is cooked, you will add parsley and green onion. You can add more water or chicken broth if you see that you need it. I like to add ginger in the sauté when children have a cold or flu.
